We can't stop making and eating these nutrient-rich, super yummy upgrade from traditional potato tots: Made with Cauliflower and Carrots. You are welcome to add a little bit of your favorite melty cheese to really make these tots delectable. Here's how to knock this recipe out of the park:
Ingredients
- 1 Cauliflower Head
- 1/4 Cup Carrots
- 1/4 Cup Shredded Cheese
- 1 Egg
- 1/2 Teaspoon Salt
- 1/4 Teaspoon Fresh Garlic
Instructions
- In your food processor, chop Cauliflower and Carrots and drain extra water from mixture.
- Fold in all ingredients until consistent.
- Place in a small amount of tot mixture into each mini muffin pan and bake at 350 for 12 minutes. Check your tots to make sure they do not burn.
- Let them cool off and enjoy with ketchup, A1, ranch, or any other sauce!
