Mighty Tuna Salad Cups!
Tuna Salad is one of Benji and Isabella's ALL-TIME favorite recipes. Instead of making a large sandwich with bread, we decided to re-think the tradition and make tuna salad presented in little cucumber cups. This is a visually beautiful and "healthified" appetizer, on-the-go snack, or full lunch for kids of all ages. Bon ApéTUNA!
Ingredients
- 1-2 Large Cucumbers
- 2 Cans of Albacore Tuna
- 1 Tablespoon Mustard
- 1 Tablespoon Mayo
- Fresh Dill for Garnish
- 1/4 Teaspoon Salt
- 1/4 Teaspoon Black Pepper
- 2 Tablespoons chopped White Onion
- 2-3 Tablespoons Diced Pickles (Dill or Sweet)
Instructions
- Cut cucumbers into 1-inch pieces and carve out center with a melon baller tool.
- Combine all Tuna Salad ingredients together in a medium bowl and thoroughly mix.
- Scoop Tuna Salad into Cucumber pieces and garnish with Dill.
