The Secret to Moist Chicken

If there is one word of advice I would give to any poultry cook, it would be Brine! Thats right! Brine baby brine! This process is very simple and produces the absolute juiciest chicken.

Try brining just once and I am sure you will not be able to stop. Don't say I didn't warn you.

Keep in mind, brining is not just for chicken: All meat will benefit from brining, so please feel free to experiment and let me know how it turns out for you.


  • 3 lbs of Chicken Breast (about 6-8 pieces)
  • 2 Cups water
  • 2 Teaspoons Salt


  1. Trim the chicken breasts of excess fatty tissue.
  2. Pound the chicken breasts flat.
  3. Mix water and salt to create the brine and place the chicken breasts inside.
  4. Cover and place in the fridge for 24 hours. The chicken can stay in the brine for three days, sometimes even longer.
  5. After the 24-hour brining, grill chicken.
