Scallop and Shrimp Tower

This mouth-watering tower and its sure to be a crowd pleaser. It's a heavenly combination of perfectly seared scallops, shrimp, ripe sweet mangos, creamy avocados and tangy kumquat (when kumquats are not in season I like to substitute them with tangerines). Dress the tower with my lemongrass-citrus vinaigrette for a kick.

Ingredients

  • 6 Large Scallops
  • 4 Large Shrimp
  • 1 Whole Avocado
  • 1 Whole Mango
  • 1 Ounce Micro Greens
  • 1 Tangerine or a few kumquats
  • 1 Empty 11oz Can

Instructions

  1. Drizzle a little oil on a frying pan and get it as hot as possible without burning the oil.
  2. Pat the scallops dry and sear them for 1 minute on each side.
  3. Bring water to boil, throw the shrimp in the boiling water cover with lid and take off heat. This cooking method will create the most tender and juicy shrimp. (Mi Advice Tip: Turn off heat as soon as you throw in the shrimp. No need to boil.)
  4. Take a food ring or use a can and begin stacking with avocado, then mango, then sliced scallops, then micro greens and finally, thinly sliced kumquats or tangerine.
  5. Decorate with the two shrimp then lift the can slowly and add vinaigrette before serving.

Ingredients for Lemongrass Jalapeño Dressing

  • 2 Tablespoons Tangerine Juice or Orange Juice
  • 2 Tablespoons Lime Juice
  • 1 Tablespoons Orange Preserve
  • 1/2 Tablespoons Jalapeño minced
  • 1 Lemongrass Stalk
  • Salt and Ground Black Pepper to taste

 

Instructions for Lemongrass Jalapeño Dressing

1. Chop up the Lemongrass stalk and mince the jalapeño.
2. Combine together and simmer for 10 minutes.
3. Strain, cool and use for the Scallop and Shrimp Tower.

This is a great dressing and can be used in variety of other salads and entrees. Fat-free, dairy free, oil free dressing.
