This is family tradition and is a delicious, quick dish that adds a beautiful color pop to any savory plate. Enjoy this as a wonderful side dish to literally hundreds of meals. Fermented foods, such as this dish, are considered to be "probiotics," which increase your overall health, especially in the gut. These foods promote the growth of friendly intestinal bacteria, and aid digestion and support immune function, including an increase in B vitamins (even Vitamin B12), omega-3 fatty acids, digestive enzymes, lactase and lactic acid, and other immune chemicals that fight off harmful bacteria and even cancer cells. Bon apetit!
