One-Skillet Mediterranean Style Dover Sole Fish

This recipe is super nutritious, easy, fast and can have an amazing presentation. The most important part… It is so, so good. This dish is also a one-skillet dinner that takes very little effort - about 15 minutes to prepare. One of the highlights of this dish for me is the beautiful presentation of the caperberries. If you can’t find them you can substitute them with just regular capers. I was ecstatic when I found some at Cost Plus. Because this dish is fast to prepare and easy to clean up, it ranks high on my list of favorites and is definitely a “mi” type of dish.


  • 2-3 Lbs Dover Sole
  • 1 Lbs Heirloom Tomatoes
  • 1/2 Red Onion
  • 5 Garlic Clove
  • 1/2 Lemon Squeezed
  • 3 Tablespoon Capers or Whole Caperberries
  • 1 Tablespoon olive oil
  • 1 Teaspoon Salt (to taste)
  • 1/2 Teaspoon Pepper (to taste)
  • Fresh Basil


  1. Get a pan nice and hot, add olive and grill the onions until they get some color.
  2. Slice the garlic, cube the tomatoes and add them to the pan. Continue sautéing till the garlic gets soft and the tomatoes get a bit mushy.
  3. Take the dover sole fillets and season them with salt, pepper, 2 crushed garlic cloves, some chopped basil and a splash of lemon juice.
  4. When the tomatoes are done cooking season them by adding salt, pepper and a splash of lemon. Once the mixture is seasoned, move it to the middle of the pan.
  5. Start folding each piece of fish in a half and fan it out around the pan. Sprinkle the caperberries or capers on top and cook for about 5 minutes or until the fish flakes apart. Splash more lemon juice and drizzle olive oil on top, garnish with some fresh basil.
