HALLOWEEN SPECIAL: Rice Crispy Pumpkins & Jack Skeleton Cake Pops!

Can you feel the little chill in the air? The Autumn Spices tickling your nose? The nostalgic feeling of being around the people you love, anticipating the all of the yummy tastes and aromas that comes with the Holidays?

The Holiday Season always STARTS with Halloween - THE holiday to feel like a kid again! It's the best no-pressure holiday, in that, we're not stressed out about making the perfect Thanksgiving turkey or Christmas ham. It's just the beginning of October and we made two Halloween recipes but there are MANY more to come.

The kids and I had a blast making these Rice Crispy Pumpkins and Jack Skeleton Cake Pops. Include your kids and feel free to recreate, reimagine, reinvent the recipes you see here... Tell us how you liked them! Make a bunch and hand them out this Halloween, share with your neighbors and friends. And as always, include the kids in your life so that they may start making memories and developing kitchen skills they'll carry with them in life.

Cheers! xoxo

  • For the Pumpkins:
  • 6 cups Kellogg's® Rice Krispies® cereal
  • 3 tablespoons butter
  • 4 cups JET-PUFFED Miniature Marshmallows
  • Tootsie Rolls and Basil Leaves for Decoration
  • For the Orange Coloring and Pumpkin Flavor:
  • 1/4 Teaspoon Yellow
  • 1/8 Teaspoon Red
  • 1/4 Teaspoon Pumpkin Pie Spice (We also added a little extra cinnamon)
  • For the Cake Pop:
  • 1 large package of Oreos (36 cookies)
  • 5 Tablespoons Cream Cheese
  • About 2 Dozen Cake Pop Sticks
  • For the White Chocolate Coating & to make Jack's face:
  • 1/2 Cup Wilton White Chocolate Chips
  • 1 Teaspoon Shortening

  1. INSTRUCTIONS FOR PUMPKINS: In large saucepan melt butter over low heat. Add marshmallows and stir until completely melted. Remove from heat then add Rice Krispies. Stir in coloring until well coated.
  2. Once cooled, shape into Pumpkins and add a Tootsie Roll and Basil leaf for decoration.
  3. INSTRUCTIONS FOR JACK SKELETON CAKE POPS: Blend Oreos until it's a pretty fine powder then in a bowl, mix in the shortening (we wish this was healthier but nothing else worked quite like shortening!)
  4. Roll into balls to make Jack's head! This recipe will make about 2 dozen.
  5. To heat up the White Chocolate to dip the pops, Microwave for 20 second intervals until consistency is soft/ liquid. Add shortening if it is too thick and repeat the microwave intervals.
  6. Dip a Cake Pop Stick into the White Chocolate about 1/8" in. This will help adhere the Cake Ball to the Stick. Once cooled, dip the Cake Pop into the White Coating and place upright - We improvised and used a few bananas as our stand!
  7. Once cooled, decorate Jack Skeleton's face on each pop - They don't have to be perfect, have fun with it!
