Grilled Watermelon Pizza with Feta & Lime

Summer time means long sunny days and warm evenings with family and friends. My circle enjoys cooking (and of course eating) so we often try to impress each other with mouth-watering recipes and magazine-style presentation. There is a long list of things I love to do in the summer and at the top is barbecuing and eating lots of watermelon... So it is no surprise that I wanted to experiment with this combination and Poof just like that, The Watermelon Pizza came to life. This recipe hits all criteria; It is easy to make, delicious, and always a crowd pleaser. Smoky watermelon, sharp feta, tangy lime, sweet honey and a bit of spice from Tajin make this dish a pop of flavor. So get your taste buds ready and enjoy!

Ingredients

  • 1 Watermelon slice
  • 1 Cucumber
  • 3 Little Red Peppers or 1 Large Red Pepper
  • 1/3 Cup Feta Cheese
  • Cilantro
  • 1/2 Teaspoon Honey
  • 1 Teaspoon Lime Juice
  • Dash of Salt
  • Dash of Tajin or Pepper

Instructions

  1. Get your grill nice and hot, spray with some pam and throw the watermelon slab on the grill. Grill about 1-2 minutes per side. You are not trying to cook the watermelon, you just want the smokey flavor and the stunning grill marks. Take off the grill, let it cool just a tad or if you prefer refrigerate.
  2. Peel the cucumber skin and then continue to use the peeler to thinly slice the cucumber into thin strands until you get to the seeds.
  3. Cut the red peppers into thin slices, roughly throw some cilantro and crumble the feta cheese
  4. Drizzle with honey, splash with lime, and sprinkle with some Tajin or Pepper.
  5. Cut into pizza like slices and enjoy the refreshing power punch of flavor. This pizza has a wonderful summer presentation and is a hit for all kinds of parties and celebrations.
