Grilled Kale Salad with a sunny side egg, goat cheese and pine nuts

This salad is loaded with flavor: the hearty grilled kale, the crisp bell peppers, the creamy goat cheese, the smoky toasted pine nuts and my favorite part: the sunny side up egg. Eggs are versatile and are an amazing addition to salads, pizzas, anything savory... I often think of Beyonce's song “If you like it then you shoulda of put an egg on it” : )


  • Salad: 1 Bunch of Kale
  • 1 Red Bell Pepper
  • 1 Egg
  • 1/3 Cup of Goat Cheese
  • 2 Tablespoons Toasted Pinenuts
  • Salad Dressing: Oil, Balsamic Vinegar, Salt, Pepper to taste.


  1. Grill kale on griddle pan or on the grill outside then pull the leaves off the rib of the kale.
  2. Cook egg sunny-side up.
  3. Julienne (thinly slice) the Red Bell Pepper.
  4. Roughly chop kale and arrange all ingredients in a salad bowl. Sprinkle toasted pinenuts on top, drizzle dressing and enjoy!
