California Greek Salad with Grilled Chicken

This salad is filled with so many delicious flavors, it IS possible to have it all in a healthy salad not get bored. In fact, you will not be able to get enough! Once you make this salad, be prepared to make it for the next month... This salad is also packed with all the nutrition you will need to feel great, have lots of energy and feel satisfied for hours. Did I mention you will be addicted? Don’t take my word for it...Try it out yourself.

Option 1: Grilled Kale - Take a large mixing bowl or a casserole dish then combine pressed garlic and the rest of the dressing ingredients. Coat the Kale in the dressing turn your grill on to medium heat and get ready to grill. Grill on each side for 2 minutes. After placing the kale on the grill, reserve the dressing left in the dish to pour over the salad at the very end.

Option 2: Fresh Kale - Take a mixing bowl and combine pressed garlic and the rest of the dressing ingredients. Take the kale off the stem, rip into bite size pieces and coat it in the dressing. Then plate the kale on a serving dish and reserve the dressing to finish at the end.

Ingredients

  • Salad: Fresh or Grilled Kale
  • 1 Chicken Breast (Please see my Chicken Brine Recipe)
  • 1/2 Cup Cherry Roma Tomatoes
  • 1/2 Avocado
  • 1 Roasted Pepper
  • 1/3 Cup Feta Cheese
  • 2 Teaspoons Sunflower Seeds
  • Olives
  • 1 Pressed clove of Garlic
  • Cumin, Chili Powder, Smoked Paprika to taste
  • Dressing: 2 Tablespoons Olive Oil
  • 2 Tablespoons of Balsamic Vinegar
  • 1-2 Cloves of Garlic
  • 1 Tablespoon of Lemon Juice
  • Salt and Pepper, to taste

Instructions

  1. For delicious, moist Brined Chicken: Pound chicken breasts. For the marinade, combine salt, ground black pepper, and spices to taste and let it marinate in a plastic bag in the fridge for no longer then 24 hours. When you are ready to cook the chicken, get out a good skillet, get it nice and hot, pat the chicken dry, spice it up and grill it. If you are using cooked chicken breast then just toss it on the pan with the spices.
  2. Now is the time to grill your kale. If you prefer fresh kale, simply give it a rough chop as well as the rest of the vegetables then add your grilled chicken breast, feta, olives, sunflower seeds and then finish with your savory dressing.
