Asian Style Ginger Basil Eggplant

Eggplants are easy to prepare and have so many health benefits. If other veggies found out the awesomeness of the eggplant they would be so jealous! My favorite variety is the Asian Eggplant because I find them to be sweeter, not bitter like large classic eggplants we always see and they require less prep and less seasonings. I have never chosen a bad Asian eggplant - they seem to be fool-proof!

For this recipe, I am using ginger and basil to accent the natural mild, asian flavor of the eggplant. They make for a healthy flavor vehicle and are very versatile - they can go any way you decide.


  • 3 Asian Eggplants
  • 1 Teaspoon Ground Ginger
  • 4-5 Basil Leaves
  • 1 Tablespoon Honey
  • 1/2 Teaspoon Salt
  • 1/2 Teaspoon Ground Black Pepper
  • 1/2 Teaspoon Ground Cumin


  1. Preheat oven to 375 degrees.
  2. Cut Asian Eggplants in long 1" pieces or 1" rounds.
  3. Chop Basil and mix with Ginger, Honey, Salt, Pepper, Cumin then add in Eggplant chunks.
  4. Place seasoned Eggplant on baking tray with a sheet of aluminum foil and place in oven.
  5. Bake for roughly 30 minutes until Eggplant is tender. This dish can be enjoyed both warm or cool. Let us know what you prefer!
